Homemade Peppermint Marshmallows

I'd been feeling some serious winter blues over the past few weeks. This is beside the fact that I 1) live in Mississippi, where it rarely falls below 40 and 2) Live with a man who believes winter is made of roaring fires and hearty lasagnas. What's to feel blue about, right? I know, I know.


Over the New Year's weekend, we spent time with my brother and his lovely girlfriend. We made homemade marshmallows and added mint extract and swirled in red food dye. They were quite possibly the greatest pick-me-up ever. They were so great that the photo above is the only photo taken of them. The making process is really too messy to whip out the Canon, and they were eaten pretty quickly there after.
