Memorial Day Weekend, in review

Memorial Day weekend is the start to "real" summer, right? Mississippi definitely got the memo, it reached well into the 90s in temperature and the humidity was just as overwhelming. I spent Saturday with two best friends, Sunday was spent getting things around the house done and Monday I woke up feeling sick so I spent most of Monday in bed or on the couch reading and napping. The best part is that now we're almost done with the weeks and that day of napping seems to have fixed whatever was off. To the photos!

Two favorites

These two are getting me through the day lately! Cups coffee is always good (I get a large medium roast, black). This lip balm from Fresh is so nice. The Rose version is a nice, reddish tint. They're a little like the Burt's Bees tinted lip balms, but more moisturizing and better color payoff.

Other than this? I'm making it!

Berry Cobbler


I think I made this two weeks ago? We ended up with a few pints of raspberries and blueberries. Friends were coming over to celebrate a birthday and so I made this instead of a cake. It's adapted a little from this cookbook. I got all the previously published books for Christmas this past year and they're really nice, with very straightforward recipes and lots of emphasis on fresh, seasonal ingredients. Plus, their black bean soup is the best. Onward to the cobbler!


Berry Cobbler
This is a pretty basic cobbler: berries, topped with a simple cookie dough, baked. I mashed the raspberries a bit and let the blueberries stay whole. The raspberries would probably have fallen apart in the oven anyway. Raspberries and blueberries are my favorite combination, but this would be equally good with any berry you like. The original calls for all purpose flour, a full cup of sugar and just an egg yolk instead of the whole egg.
1/2 cup spelt flour
1/4 teaspoon baking powder
Pinch of salt
1 stick unsalted butter, softened
1/2 cup + 1/4 cup of sugar
1 egg
1 1/4 teaspoon vanilla extract
1 tablespoon cornstarch (don't skip it)
2 pint fresh berries

Mix flour, baking powder and salt together. 
In stand mixer or bowl, cream the butter and 1/2 cup of sugar together. Add in the egg and 1/4 teaspoon of vanilla.
Slowly add the flour mix to the butter mix. Refrigerate the cookie dough and preheat oven to 375. 

Combine 1/4 cup of sugar, cornstarch, 1 teaspoon vanilla and berries. Toss well.
Put berries into any 8-cup baking dish. I used a large pie dish, an 8-inch square would work also. Drop the cookie dough onto the berries, and spread with a spatula or fingers. Most of the berries should be covered. I think it looks best a little messy, but if you want a neater presentation it'll only take a little more work.
Bake about 45 minutes, until berries are bubbling and cookie dough is a light gold.

Weekend, in review

We had a busy weekend, lots of shopping, cleaning, and then time with family and friends. I headed to Vicksburg Saturday to pick up a few things and ended up crossing the state line into Louisiana for some Chimay for A. Then, a concert that night that was pretty amazing and Sunday we hosted a big Mother's Day brunch for A's family.

Lately

Nothing super exciting around here lately, just busy with normal life stuff. We've hosted a few dinners, parties and movie nights, spent some time with our nephew and just generally tried to enjoy the backyard before we hit summer heat. This Sunday we'll host a Mother's Day brunch for A's family, and probably spend Saturday roaming a few different festivals in town and nearby.

*The drink made with the syrup is just: 1 tbl syrup+ 1.5 oz silver tequila+ sparkling limeade. Everyone enjoyed! Well, except the two rhubarb haters. They just drank margaritas. Still good!

Two Favorites

I've been eating these nori chips for a snack every day. I think most of us start to drag around 3 pm, and so I break these guys out and all is well. I like both flavors, and I just found a recipe for making your own in whatever flavor you like. The second favorite in the photo is this nail polish. I've been wearing a lot of oranges and corals lately, which tell me that summer is on the way!
